Stuffed Turkey Meatloaf

I have an ongoing battle with meatloaf.  I've had at least 3 different people tell me how to make it, and out of probably 10 tries, I might have been successful 1 time.


Last month, I decided to make a variation of meatloaf that my mom used to make once in a while.  It's basically regular meatloaf with spinach and cheese stuffed in the middle.  Can we say delicious???


The Meatloaf
1 package of lean ground turkey (it's about 1.3-lb)
1/2 package McCormick Meatloaf Seasoning
All of the rest of the ingredients that are listed on the seasoning mix (divided in half, since the recipe calls for 2 lbs of meat)


Yes.  I took a short cut.  Sue me.


The Spinach
1 package of frozen spinach, cooked in the microwave for 5 minutes
about 1 T olive oil (Next time, I will not add this in - you don't need the extra oil)
Salt (a tiny tiny tiny amount)
Pepper
Garlic Powder
Onion Powder


The Method

  • Mix together the meatloaf mix and divide it in half.  Spread one half on a baking sheet (I usually put it in some kind of oval-rectangle).
  • Spread the Spinach on top of the meatloaf, leaving a small border around the edge
  • Sprinkle about 1/2 cup Part Skim Mozzarella Cheese across the top of the spinach (I used 1/4 cup and only put it on half, since my husband doesn't eat cheese)
  • Bake at 350 for 45-50 minutes.

I made baked potatoes to go along with the meatloaf.

If divided into 8 servings:  5 Points Plus each.
If divided into 6 servings:  7 Points Plus each
If divided into 4 servings:  9 points plus each


I got the clearance to make it again.  That means this one is a winner!
